When you are married to someone in the military, you realize how important a home cooked meal is for your spouse. My husband is like a growing child, he is always hungry. When he comes back from the field, I know he is ready to enjoy real food after eating MRE’s for days, weeks, and sometimes months.
In this section of the blog, I will be sharing with you some of my husband’s favorite meals that are easy on your budget, healthy and balanced, as well as simple to prepare. Due to my new-found love of using fresh herbs in everything I cook, I will also include a section in each post describing the health benefits of the herbs used.
This month’s recipe is one of my husband’s favorite Italian-inspired dishes. It is super easy to prepare and very filling.
This recipe calls for fresh basil & parsley. Basil is packed with cancer-fighting, anti-aging, and antioxidant properties. To read more about the health benefits of basil, click here. The health benefits of parsley are numerous. It can be used to control diabetes, helps reduce inflammation in the joints, boosts your immune system, and aids in fighting osteoporosis due to the calcium content in this magical herb.
Ingredients:
1-Roll of Pillsbury pizza crust
Nonstick spray
1lb-skirt or shoulder steak
1-clove garlic
1 Tbs-Basil (fresh)
1 1/2 Tbs-Parsley (fresh)
1/4 tsp-salt
1/4 tsp-pepper
1/2 cup-spinach (fresh)
2 Tbs-olive oil
1 bag-Italian Blend Shredded Cheese
1 bag-Parmesan Cheese-shredded
Instructions:
1-Spray a cookie sheet with non-stick spray, then press pizza crust down on cookie sheet. Spread evenly across entire cookie sheet.
2-Preheat oven to 360 degrees.
3-Chop up garlic, basil, and parsley finely. Mix together and add in the olive oil, salt, & pepper.
4-Spread olive oil and herb mixture on the crust with a brush, then bake for 10 minutes.
5-Meanwhile, sear steak in a skillet on medium heat to your desired liking. I prefer medium-well.
6-Take out pizza crust and put to the side.
7-Finish cooking steak and cut into small bite-sized pieces.
8-Begin assembling calzone on one side of cookie sheet. Begin with 1/2 bag of Italian blend cheese, then layer with spinach, steak, and top with 1/2 bag Parmesan cheese. Fold over and cut a slit in top. Then, brush additional olive oil/herb mixture on top.
9-Bake on 360 for 12 minutes or until lightly browned on top.
This meal serves 3-4 and costs approximately $12.00
