When you are married to someone in the military, you realize how important a home cooked meal is for your spouse. My husband is like a growing child, he is always hungry. When he comes back from the field, I know he is ready to enjoy real food after eating MRE’s for days, weeks, and sometimes months.
In this section of the blog, I will be sharing with you some of my husband’s favorite meals that are easy on your budget, healthy and balanced, as well as simple to prepare. Due to my new found love of using fresh herbs in everything I cook, I will also include a section in each post describing the health benefits of the herbs used.
This week’s recipe is new and has quickly become one of my husband’s favorites. He has ranted and raved over this recipe since I made it.
This recipe calls for fresh basil, thyme, & parsley. Basil is packed with cancer-fighting, anti-aging, and antioxidant properties. To read more about the health benefits of basil, click here. Thyme is healthy for your body in many ways. It boosts your immune system, reduces stress, protects against heart diseases, and has been used to treat chronic coughs and respiratory diseases. The health benefits of parsley are numerous. It can be used to control diabetes, helps reduce inflammation in the joints, boosts your immune system, and aids in fighting osteoporosis due to the calcium content in this magical herb.
Now, let’s get started on this tasty meal.
Ingredients:
To make the stuffing:
1 tsp fresh basil (chopped finely)
¼ tsp fresh thyme (chopped finely)
1 tbs fresh parsley (chopped finely)
1-clove of garlic (chopped finely)
½ tsp salt
¼ tsp pepper
½ cup shredded Italian Blend cheese
½ block cream cheese (softened or microwave 20 seconds)
½ tbs olive oil
1 cup of fresh chopped spinach
Other Ingredients:
1 pack of boneless/skinless chicken
½ package of bacon
½ package of egg noodles
Instructions-Stuffing:
1-Chop all of the herbs and garlic finely and add to a mixing bowl.
2-Add in the salt, pepper, cream cheese, shredded cheese, and spinach. Mix everything together for the stuffing.
Instructions-Assembling the Chicken Breasts:
1-Line a medium to large size baking sheet with tin foil.
2-Preheat oven to 365 degrees.
3-Cut a slice in the side of each chicken breast (butterfly them). Do not cut in half, only a slit that allows the chicken breast to open and creates a pocket.
4-Place on a cutting board and put a piece of wax paper on top.
5-Flatten the chicken breasts slightly by beating with a rolling-pin or meat tenderizer.
6-Spoon the stuffing mixture inside each chicken breast and close. Place on the baking sheet lined with tin foil.
7-Take bacon and begin wrapping it around each piece of chicken until it is covered slightly.
8-Place on the cookie sheet and bake at 365 degrees for 35 minutes.
*This is also when you can begin boiling water for the egg noodles.
9-Then, turn oven up to 400 degrees and bake an additional 10 minutes, then serve.
Serve with a side of egg noodles or, for a low carb option, serve with a side salad
This meal costs $16.00 and serves 3-4 depending on portion sizes.
